Cranberry Tart for Christmas Dessert

Makes 3 dozen 3" tarts

Ingredients

3 eggs

3 cups dried cranberries

½ cup butter

2 ¼ white sugar

3 teaspoons vanilla

1 ½ teaspoons salt

Pastry * : 36   3" tart shells

 

Method

Preheat oven to 350°F (180°C). Beat eggs  with sugar. Beat in melted butter then the cranberries, vanilla and salt. Line muffin tins with pastry. Fill with mixture to 3/4 full. Bake at 350°F for 20 minutes. These freeze very well.

 

Substitute raisins or your favorite chopped nuts for the dried cranberries.

* You can also purchase prepared pastry shells in the frozen food section of your grocery store.
