Carrot, Apple and Yogurt Loaf

Moist and delicious

 

Ingredients

 

1 egg

1/2 cup brown sugar

1/3 cup canola oil

1/4 cup sugar

1/4 cup sour cream or Greek yogurt

2 teaspoons vanilla

2 teaspoons cinnamon

1/2 teaspoon ground nutmeg

1 cup flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

3/4 cup shredded carrots

3/4 cup shredded apple

 

Method

Preheat oven to 350º F, grease and flour a loaf pan.

 

In a large mixing bowl combine the egg, brown sugar, canola oil, sugar, vanilla, sour cream or yogurt, cinnamon and nutmeg.

 

Fold in the flour, baking powder and baking soda using a spatula.

 

Gently mix in the carrots and apple.

 

Pour into the prepared cake pan.

 

Bake for 45 minutes or until the center is set, or when a toothpick comes out clean when inserted.

 

Let cool for 15 minutes on a rack before removing from the pan.
